All Day Courgette Bites

Note from Tess:
Mum said "Tess, I have a glut of courgettes from the allotment why don't you make courgette the hero of your recipe this month".   Yup, she said 'hero'!  Now that Masterchef Australia has started, Mum will be using lots of those phrases!  BOL!  However, when it was time to make my dish, Mum had given all the courgettes to the food co-op and forgot to keep one back for me!  Excuse me whilst I hold my head in my paws in disbelief!  Dad and I then had to go to the allotment to pick a courgette!  Nose bump to Dad for being my hero.

Ingredients:
2 tbsp finely chopped courgette
2 tbsp finely grated cheese (we used grano padano)
2 tbsp finely chopped cooked meat (we used ham)
4 medium eggs
4 tbsp of milk

Method:
1 Preheat oven to 180 and wipe a 12 hole mini muffin tin with oil.

2 In a bowl, mix the courgette, cheese and meat and then divide amongst the muffin tin.

3 In another bowl, whisk the eggs with the milk and pour over the mixture already in the muffin tin.

4 Bake for 12 to 15 mins until golden brown.

Storage:
Leave to cool and store in the fridge.  They will keep in the fridge for 3 - 4 days and they can also be frozen.
