Pawty Cake
We made a birthday cake for Rufus as this was his first year celebrating a birthday. Well, you can't have a pawty without cake! The only 'negative; is that the cake only keeps in the fridge for two days so need eaten quickly! BOL!
Ingredients:
2 large, peeled, sweet potatoes
200g dairy-free yoghurt
150g self-raising four
1 medium banana
3 tbsp melted coconut oil
2 tbsp honey
1 tsp baking powder
1 large egg
Method:
1 Preheat oven to 140g fan and line a cake tin with baking paper.
2 Boil the sweet potatoes for 10 mins or until they are soft and leave to cool.
3 Mash one of the sweet potatoes in a mixing bowl and add the flour, baking powder, banana, honey, oil and egg and mix until smooth.
4 Spoon the mixture into the cake tin and bake in the oven for 35 minutes until firm in the centre. Remove from the oven and leave to cool on a wire rack.
5 Once cooled, transfer to a serving plate.
6 Make the topping - mash the other sweet potato into a mixing bowl then add the yoghurt and mix until smooth. Spread the topping over the cake.
Storage:
Store in the fridge and eat within 2 day or give portions to your doggy friends.
