Pumpkin Bisookie - makes 36
What is a 'bisookie' you ask? It is a mix between a biscuit and a cookie! BOL! We harvested lots of pumpkins from our allotment and I asked for one of them, for this month's recipe. We ended up with 12 pumpkins in total!
Ingredients:
340g plain flour
170g pureed pumpkin
2 medium eggs
2 tbsp semi-skimmed milk
Method:
1 Heat the oven to 180 fan.
2 In a bowl mix all the ingredients together to form a dough.
3 Roll out the dough on a floured surface until the dough is ½ inch thick.
4 Cut out shapes using a cutter - we used leave shaped.
5 Place the bisookies onto an ungreased baking sheet.
6 Bake for 20 minutes in the oven and then leave to cool on the trays for 5 mins.
Storage:
The bisookies will keep for 2 weeks in an airtight container.
