Chewy Carrot and Oat Slice
This month, we had lots of carrots from the allotment.
Mum was making soup with some of them and said I could have one for my recipe. Nose bump to my Mum!
Ingredients:
85g rolled Oats
60g grated carrot
2 tbsp unsweetened apple sauce
1 large egg
Method:
1 Preheat oven to 160 fan
2 Mix all the ingredients together in a bowl until combined.
3 Press the mixture into a lined loaf tin.
4 Bake for 25 - 30 minutes until golden.
5 Cool and then slice.
Storage:
Will keep in an airtight container in the fridge for a week.
